Zucchini Bread
Combine:
3 eggs
1 1/2 to 2 cups sugar
Add and mix well:
1 cup oil
1 tsp. vanilla
Combine separately and add:
1 cup oatmeal, quick or rolled
2 cups flour
1 Tbsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
Add:
2 cups zucchini, unpeeled, raw, grated
nuts (optional)
Pour into 2 greased and floured loaf pans. Bake at 350 for 1 hour.
