Tapioca Pudding

Ingredients:

1 egg, slightly beaten

1/3 cup sugar

3 Tbsp. tapioca

1/8 tsp. salt

2 3/4 cups milk

1 tsp. vanilla


Directions:

Combine all ingredients in a saucepan and whisk well. Cook over medium heat, stirring constantly until mixture comes to a full boil and is slightly thickened, about 6 - 8 minutes. Remove from heat BEFORE desired thickness is reached since the pudding will continue to thicken more as it cools. Makes 4 to 5 servings.
