Never Fail Sponge Cake with Frosting

Ingredients:

1 1/4 cups flour

1 cup sugar

1/2 tsp. baking powder

1/2 tsp. salt

6 egg whites

1 tsp. cream of tarter

1/2 cup sugar

6 egg yolks

1/4 cup water

1 tsp. vanilla


Directions:

Sift together flour, 1 cup sugar, baking powder and salt. In a large bowl beat egg whites until frothy; add cream of tarter. Gradually beat in 1/2 cup sugar, a little at a time; beat until whites form stiff peaks.


In a small bowl, combine egg yolks, water and vanilla, beat to mix, then add flour mixture, beat at medium speed for 4 minutes or until mixture is light and fluffy. Fold yolk mixture gently but thoroughly into beaten egg whites. Turn into an ungreased 10-inch tube pan. Bake at 350 for about 1 hour. Invert to cool.


Pineapple Frosting:

Cream 1/4 cup butter and 1/4 cup shortening. Gradually add 3 cups powdered sugar, beat until light and fluffy. Blend in 1 can (8 1/2 oz) of well-drained crushed pineapple, 1/8 tsp. salt, 1/4 tsp. vanilla and 1/2 tsp. lemon rind.
