Roasted Soy Beans

Ingredients:

1 cup dried soybeans

3 cups water


Directions:

Wash soybeans and remove any foreign particles. Add the water to the soy beans and soak overnight in refrigerator. Pour soybeans and the liquid they soaked in, into a saucepan. Add more water if needed to keep beans covered. Bring to a boil, reduce temperature and simmer for at least an hour. Remove from heat and drain liquid. Spread soybeans onto a cookie sheet. Bake for a couple of hours in a 250 degree oven until brown and crispy. Stir the soybeans occasionally during cooking time.
