Bohemian Poppy Seed Cake

Cake Ingredients:

3/4 cup dry poppy seeds

1 cup milk

2 1/4 cups flour

2 1/2 tsp. baking powder

3/4 cup oleo

1 1/2 cups sugar

4 egg whites, beaten until stiff peaks form

1/2 tsp. vanilla


Directions:

Soak poppy seeds in milk for 2 hours. Preheat oven to 350. Cream oleo and gradually add sugar. Add dry ingredients alternately with poppy seed/milk mixture. Beat well. Fold in egg whites and vanilla. Pour into two greased 9" pans that have the bottoms lined with wax paper. Bake for 25-30 minutes or until done. Cool. Slice cake layers in half to make 4 layers of cake. Assemble cake using using custard filling between the layers and on top of the cake.


Note: Custard filling will be thin (sparse). If more filling is desired, make the custard filling recipe by 1 1/2 or 2 times the original recipe amounts.   


Custard Filling:

2 cups milk

3/4 cups sugar

4 egg yolks

3 (large) Tbsp. cornstarch

2 tsp. vanilla

2 Tbsp. oleo

Combine milk, sugar, egg yolks, cornstarch and vanilla in a saucepan. Mix until well blended. Add oleo. Cook over medium heat, stirring constantly for 5 minutes or until mixture is thick.
