Peanut Brittle

Ingredients:

2 cups sugar

1 cup light corn syrup

3/4 cup water

1 Tbsp. margarine or butter

2 cups peanuts

1 tsp. vanilla

1/2 tsp salt

1 tsp. baking soda


Directions:

Generously butter 2 cookie sheets. In large heavy saucepan, combine sugar, corn syrup and water. Cook until sugar dissolves, stirring constantly. Continue cooking until candy thermometer reaches hard crack stage (300 degrees), stirring occasionally. Stir in margarine and peanuts. Remove from heat; stir in vanilla salt, and baking soda. Pour onto prepared cookie sheets; spread as thin as possible. Cool completely; break into pieces. Store in airtight container in cool dry place. Makes 2 pounds.
