Peaches and Cream Cheesecake
Ingredients:
3/4 cup flour
1 tsp. baking powder
1/2 tsp. salt
1 egg
1 (3 1/4 oz) pkg. regular dry vanilla pudding (do not use instant)
3 Tbsp. margarine
1/2 cup milk
2 1/2 cups sliced peaches, reserve the juice
1 (8 oz) pkg. Cream Cheese
1/2 cup sugar
3 Tbsp. peach juice
1 Tbsp. sugar
1/2 tsp. cinnamon
Directions:
Grease bottom and sides of a 10" pie pan. Combine the first 7 ingredients in a large bowl. Beat 2 minutes at medium speed. Pour into pan and place peaches over the batter crust.
Combine cream cheese, sugar, and juice. Beat well. Spoon to within 1" of edge batter. Combine 1 Tbsp. sugar and cinnamon; sprinkle over the cheese filling.
Bake at 350 for 30 to 35 minutes or until golden brown. Filling will appear to be soft.
