Fry your choice of vegetables in a little oil, remove from heat and set aside. Crack 2 eggs into a small bowl with a little salt and pepper; whisk well. Pour into a hot, greased skillet. As the egg cooks, use a spoon to drop the cooked vegetables on half of the egg in the skillet. Sprinkle a little cheese on top. When set, use a cooking utensil to fold the egg in half, covering the vegetables. Fry a little longer on both sides until egg is fully cooked.
