Nacho Cheese Sauce
This slightly spicy, very creamy, homemade version of nacho cheese is sure to be a favorite among your family and friends!
Ingredients:
2 Tbsp. butter
2 Tbsp. flour
1 cup milk
1/4 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. paprika
1/8 tsp. cayenne pepper (optional)
1 cup shredded cheddar cheese
1 cup shredded colby cheese
Directions:
Melt the butter in a saucepan over medium heat. Remove from heat and add flour, milk, salt, paprika, and cayenne pepper. Whisk together until smooth. Return to the stovetop and bring the mixture to a boil then reduce heat and simmer for 1 full minute, stirring constantly as the sauce thickens to prevent it from burning. Remove from heat. Add the grated cheese and gently stir, allowing the cheese to melt completely. If the cheese it too thick, just add a little more milk and whisk to combine.
This nacho cheese sauce will only be smooth and runny as long as it is warm, once it cools it will thicken. You can keep the cheese sauce warm in a crockpot, fondue pot, or other warming dish if you are serving this at a party. For a little extra "spice" replace some of the shredded cheese with pepper jack cheese or add minced jalapeños to the mixture as well.
