Lime Delicious Cheesecake

Ingredients:

1 1/4 cup graham cracker crumbs  

2 Tbsp. sugar

1/3 cup butter or margarine, melted

1 envelope unflavored gelatin

1/4 cup cold water

3 eggs, separated

1 (3 1/2 oz) pkg. Lemon Flavor Instant Pudding

1/4 cup lime juice

1/2 cup sugar

1 1/2 tsp. grated lime peel

2 (8 oz) pkg. Cream Cheese, softened

Few drops green food coloring (optional)

2 cups thawed frozen whipped topping


Directions:

Combine crumbs, sugar and margarine; press onto bottom of 9" spring-form pan. Bake at 325 for 10 minutes. Cool. Soften gelatin in water; stir over low heat until dissolved. Beat egg yolks; blend into dissolved gelatin with juice, 1/4 cup sugar and peel. Cook, stirring constantly, over medium heat 5 minutes. Cool. Gradually add gelatin mixture to cream cheese, mixing at medium speed on electric mixer until blended. Stir in food coloring. Beat egg whites until foamy; gradually add remaining sugar, beating until stiff peaks form. Gold egg whites and whipped topping into cream cheese mixture; pour over crust. Chill until firm. Garnish with lime slices and fresh mint, if desired.
