Lemon Filling

Ingredients:

3/4 cup sugar

3 Tbsp. cornstarch

1/4 tsp. salt

3/4 cup cold water

2 egg yolks

1 Tbsp. margarine or butter

2 tsp. grated lemon peel

3 Tbsp. lemon juice


Directions:

In small saucepan, combine sugar, cornstarch and salt; mix well. Gradually stir in cold water until smooth. Cook over medium heat, stirring constantly, until mixture boils; boil 1 minute, stirring constantly. Remove from heat.


In small bowl, beat egg yolks; stir about 1/4 cup of hot mixture into egg yolks. Gradually stir yolk mixture into hot mixture. Cook over low heat, stirring constantly, until mixture boils; boil 1 minute, stirring constantly. Remove from heat; stir in margarine, lemon peel and lemon juice. Cool.


Makes 1 1/3 cups; fills 2 layer cake.
