Lemon Bread

Ingredients:

2 Tbsp. shortening

1 cup sugar

2 eggs

1 Tbsp. grated lemon rind

1 1/2 cups flour

1/2 tsp. salt

1 1/2 tsp. baking powder

1/2 cup milk


Topping:

1/3 cup sugar

3 Tbsp. lemon juice


Directions:

Heat oven to 350. Blend shortening and sugar, add eggs, one at a time, beating after each addition. Stir in lemon rind. Alternately add sifted dry ingredients. Spread into a prepared loaf pan. Bake in a moderate oven for about 1 hour. Let stand for 5 minutes in the pan. Remove loaf to cake rack, standing it upright. Mix sugar and lemon juice, spread over top of loaf with a pastry brush until all of the topping is absorbed.
