Jell-O Cake (Lemon Lime Refrigerator Cake)

Ingredients for Cake:

1 (3 oz) pkg. lime Jell-O

1/2 cups cold water

3/4 cup boiling water

1 regular-sized box yellow mix


Ingredients for Topping:

1 envelope Dream Whip

1 (3 oz) pkg. instant lemon pudding

1 1/2 cups cold milk

1/2 tsp. lemon flavoring


Directions:

Dissolve Jell-O in hot water. Add cold water and set aside at room temperature. Mix and bake cake as directed on box. Pour into a 9x13" pan. Cool cake for 25 minutes.


Poke deep holes through top of cake. Space holes about 1" apart. With a cup, slowly pour Jell-O into the holes. Refrigerate while preparing topping.


In a chilled bowl, blend all ingredients and beat until stiff, about 3-8 minutes. Immediately frost cake. Cake must be stored in the refrigerator and served chilled. Frosted cake may be frozen for storage.


Variations: Use white or lemon cake mix and any flavor Jell-O and vanilla instant pudding.
