Hush Puppies

Made from a cornmeal based batter, this savory treat is often served as a side with seafood or barbecued foods or along side other deep fried appetizers.


Ingredients:

1-1/2 cups cornmeal

1/2 cup flour

1 tsp. baking powder

1/2 tsp. garlic powder

3/4 tsp. salt

1 egg

3/4 cup milk

1/4 cup water

1 small onion, diced

1/4 cup sweet corn (optional)


Directions:

In a large bowl, combine the cornmeal, flour, baking powder, garlic powder, and salt. Whisk the egg, milk, and water and add to the dry ingredients. Add diced onions and sweet corn and mix just until ingredients are all combined. Take about 1 tablespoon of the mixture at a time and form them into little cakes. Fry in 1-inch of hot oil until golden brown on both sides. Set on a plate lined with paper towels to absorb the extra oil. Serve warm.
