Gourmet Potatoes

Ingredients:

6 to 8 medium potatoes

2 cups shredded Cheddar cheese

1/4 cup butter

1/2 cup sour cream

1/3 cup chopped onion

1 tsp. salt

1/4 tsp. pepper

2 Tbsp. butter


Directions:

Cook potatoes in skins; cool; peel. Put through ricer or grate. In saucepan, low heat, combine cheese and 1/4 cup butter. Stir until almost melted. Remove and blend in sour cream, onion, salt and pepper. Fold in potatoes and put into greased casserole. Dot with butter and sprinkle with paprika. Bake at 350 for 30 minutes or 325 for 1 hour (better way).
