Spectacular Frozen Corn

This recipe makes a BIG batch to freeze for multiple meals, and it's REALLY good!


Ingredients:

35 ears fresh cut sweet corn (16-18 c. cut corn)

1 lb. butter

1 pt. Half and half


Directions:

Husk, silk, and wash corn. Cut from cob into large roaster. Add butter and half and half. Put in 325 for 1 hour, stirring occasionally. Cool down by placing roaster in sink with ice water under it. Be careful not to get into corn mixture. When cool, package and freeze as quickly as possible. To serve, heat corn thoroughly and add salt and a bit of sugar, if desired. Makes a very creamy, buttery corn.


Note: When making this with mom several years back I recall having added salt and sugar to the recipe BEFORE freezing it . . . I just don't know what amounts we added. Will have to make this again sometime and adjust the recipe accordingly.
