Cream Caramels


Ingredients:

2 cups sugar

1/2 cup butter

3/4 cup light corn syrup

2 cups cream, divided

Nuts (optional)


Directions:

Bring sugar, butter, corn syrup, and 1 cup cream to a boil, stirring constantly. Gradually stir in last cup of cream. Stir frequently as mixture begins to thicken, constantly as it darkens. Cook to 254 degrees (a little dropped into cold water forms a firm ball). Pour into buttered 7" square pan with 1/2 cup broken nuts scattered over the bottom (Optional). When cold, cut into squares.
