Carrot Cake
Ingredients:
2 cups sugar
1 cup oil
4 eggs
2 cups flour
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 cups grated carrots
1 cup nuts (optional)
Directions:
In a large bowl, combine sugar and oil. Beat in eggs one at a time. In a separate bowl combine flour, baking powder, baking soda, cinnamon and salt. Add to egg mixture and mix well.
Add grated carrots and nuts. Bake in greased and floured 9x13 pan at 350 for 45 minutes. Turn off oven. Leave in oven for 5 more minutes. Ice with Philadelphia Cream Cheese Icing (or Kelsey’s Lime Dream Whip Frosting, below).
Kelsey’s Lime Dream Whip Frosting: Combine 1 package of Dream Whip, 1/2 cup cold milk, 4 Tbsp. powdered sugar, and 2 Tbsp. freshly squeezed lime juice. Use electric beaters to beat until thickened and smooth.
