Bruschetta

This little appetizer is so easy to make and just bursting with flavor and freshness!


Ingredients:

Salted wafer crackers

Roma tomatoes

Mozzarella (or other cheese of choice)

Fresh basil


Directions:

Make sure your roma tomatoes are not overly ripe, ideally they should be fresh and still nice and firm. Slice the tomatoes in round circles that will fit nicely on the size of cracker you are using. Also slice the mozzarella into thin slices also relative to the size of the cracker.


Arrange the crackers on a platter, place a slice of cheese on each of the crackers, place a slice of tomato on each cheese, and top with a single basil leaf.


If you want to add a little salt to the tomato you can, but only do this if you are going to be serving the appetizer right away, otherwise the salt will cause the tomato to “juice” which makes for a messy appetizer; in most cases it is best just to choose a kind of cracker that is salted and leave the tomato plain.
