Favorite Brownies

Ingredients:

4 squares unsweetened chocolate

1 cup margarine or shortening

4 eggs, well beaten

2 cups sugar

1 tsp. vanilla

1 cup flour

1/4 tsp. salt

1-2 cups chopped nuts (optional)


Directions:

Melt chocolate and margarine in a saucepan; cool. Add eggs and sugar and beat until thick.

Add vanilla. Fold in flour, salt and nuts, just until blended. Pour into a greased 9x13 baking pan. Bake at 350 for 25 to 30 minutes, or until shiny and firm on top. Do not over-bake, middle should be fudge-like. Cool completely, then cut into squares. Makes about 24 brownies.

Variations:


Fudge Brownies: Substitute 2/3 cup oil for margarine or shortening. Omit 2 eggs. Add 1/2 cup boiling water with oil and 1/2 tsp. baking soda and 1/3 cup flour.


Peanut Butter Brownies: Omit 1 egg. Add 1/2 cup peanut butter.
