Breaded Appetizers

This is my own recipe for a very simple batter that works great for breading and deep-frying just about anything . . . onion rings, breaded mushrooms, deep-fried pickles, you name it!


Ingredients:

2 Eggs

About 1 c. Flour

About 3 Tbsp. Water

About 2 Tbsp. Oil

Salt (to taste)

Pepper (to taste)

Cajan Seasoning (to taste)

Vegetables of Choice (ex. Onions, Mushrooms, Peppers...)


Directions:

Add flour and water, whisk until smooth. Add remaining ingredients. Deep fat fry.

Variations:


Veggie Fritters: You can try any number of different veggies to bread and deep fry, just replace the onions in the recipe with your choice of fresh vegetables. It works best if the vegetables are sliced very thinly or chopped into bite-sized chunks. Some vegetable worth giving a try: mushrooms, artichoke hearts, okra, eggplant, green tomatoes, bell peppers, cauliflower, green beans, and zucchini.


Note: For any veggies that are extra juicy or sticky (like okra!) it often works best to roll them in flour first before dipping them in the batter to fry.


Breaded Pickles or Green Olives: If you’ve never tried breaded and deep fried pickles or olives it may sound rather strange at first, but they are actually really delicious! Just dab the pickles or green olives with a paper towel first to get them dry before dipping them in the batter. For green olives you might also consider stuffing them with blue cheese before breading or adding some parmesan cheese to the batter.


Breaded Mozzarella Sticks: Breaded cheese sticks make a really delicious party appetizer! Just take simple mozzarella sticks and coat them in the Basic Breaded Batter dough then roll them in cracker crumbs and deep fry.


Cheesy Jalapeño Sticks: For a spicy, cheesy treat you can take jalapeño slices and with slices of mozzarella cheese, coat them in the batter, roll them in cracker crumbs, and deep fry. To make it extra cheesy, try adding some parmesan to the batter.


Breaded Meat: Make sure the meat is fully cooked before breading and deep frying it. I typically like to add extra black pepper and a decent amount (about 1/2 to 1 tsp) of Cajun spice to the batter to make it extra flavorful. Beef strips, pork pieces, chicken, seafood, hot dogs, sausages, bacon . . . any number of meats are good when breaded and fried.


Other Things You Can Try Breading and Deep Frying: Boiled eggs, potatoes, corn on the cob, ravioli, pizza pockets, etc.


Remember, if the item you are trying to bread is extra juicy or sticky you can roll it in flour first before dipping it in the batter. Or if you want your deep fried goodies to be extra crispy you can coat them with the batter and then roll them in cracker crumbs before deep frying.
