Black Bean Dip

This is one of my absolute favorite dishes! It has become my “go-to” recipe for when we’re having guests over, attending a potluck, or participating in any social event where I’m asked to bring a dish to share. It’s so good, in fact, that sometimes we completely forget about the chips and just it as a salad in the main meal instead of serving it as an appetizer dip. Wherever I’ve served this dish it has been a huge hit, it’s just so simple and yet bursting with unique and zesty flavor!


Ingredients:

2 cans black beans, drained

2 cans corn, drained

4 roma tomatoes

1 small onion

1-2 Tbsp. lime juice

1-2 Tbsp. olive oil

1/4 cup fresh cilantro

Salt to taste

1 bag corn tortilla chips


Directions:

Drain the black beans and corn and pour into a medium sized serving bowl. Dice the tomatoes and onions fairly small and add to beans and corn. Add all the remaining ingredients and mix well. Refrigerate for at least 1 hour so that the flavors have time to really blend with each other. During that hour of blending, give the mixture a stir every so often to help the flavors really blend well. Serve with chips or enjoy as a simple bean salad.
