Biscuits and Sausage Gravy

Biscuits:

2 cups flour

1 tsp. salt

3 tsp. baking powder

1/3 cup Crisco

3/4 cup milk


Sausage Gravy:

1 lb. ground sausage

 3 Tbsp. flour

2 1/2 cups milk, divided


Preheat oven to 450 degrees. Combine flour, salt, and baking powder. Cut in Crisco until about the size of peas. Stir in milk until just mixed. Knead dough 10 minutes on a floured surface. Pat out dough until it is about 1 inch thick, and cut biscuits with biscuit cutter or a glass. Spray a baking sheet with cooking spray. Place biscuits close together and bake for 10 - 15 minutes or until light brown.


For Gravy, fry sausage until well browned; remove from pan. Drain off grease, reserving 3 Tbsp. in pan. Sprinkle flour into pan. Cook for 2 minutes, stirring constantly. Add 1 cup milk, whisking rapidly to avoid lumps. Add remaining milk, stirring constantly. Add sausage, and boil for 2 minutes. Serve over biscuits.
