Basic White Sauce

A base for creamed dishes and many sauces, used in place of Cream of Chicken or Cream of Mushroom Soup.


Ingredients for a Thin Sauce:

1 Tbsp. butter

1 Tbsp. flour

1/4 tsp. salt

1/8 tsp. black pepper

1 cup milk


Ingredients for a Medium Sauce:

2-3 Tbsp. butter

2-3 Tbsp. flour

1/4 tsp. salt

1/8 tsp. black pepper

1 cup milk


Ingredients for a Thick Sauce:

4 Tbsp. butter

4 Tbsp. flour

1/4 tsp. salt

1/8 tsp. black pepper

1 cup milk


Directions:

Melt the butter over low heat in a heavy saucepan. Blend in flour. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Bring to boil; boil 1 minute, stirring constantly. Cook until thickened (for best flavor cook 10 minutes).
