Basic Cream Filling
Ingredients:
1/2 cup sugar
3 Tbsp. flour
1/4 tsp. salt
1 1/4 cups milk
2 egg yolks or 1 egg, slightly beaten
1 Tbsp. margarine or butter
1 tsp. vanilla
Directions:
In small saucepan, combine sugar, flour and salt. Gradually add milk; mix well. Cook over medium heat until mixture boils, stirring constantly; boil 1 minute. Blend small amount (about 1/4 cup) hot mixture into egg. Return egg mixture to saucepan; mix well. Cook until mixture starts to bubble, stirring constantly. Stir in margarine and vanilla. Cover and cool. Makes 1 1/3 cups; fills 2 layer cake.

Coconut Cream Filling: Stir in 1/3 cup flaked coconut with vanilla.
Butterscotch Cream Filling: Substitute 2/3 cup firmly packed brown sugar for sugar.
