Baking Powder Biscuits

Ingredients:

2 cups flour

2 Tbsp. sugar

5 tsp. baking powder

1/3 cup shortening

1/2 tsp. salt

3/4 cup milk


Directions:

Sift dry ingredients together. Cut in shortening; mix well. Stir in milk quickly to make soft dough. Roll 1/2 inch thick; cut with cutter. Bake at 450 for 10-12 minutes, until lightly browned. Makes about 8 small biscuits or 4 medium sized.


Variations:

Drop Biscuits: Add an extra 1/2 cup of milk to the batter. Drop dough from a tablespoon onto a greased baking pan.  


Cinnamon Rolls: Roll dough into oblong shape. Spread with margarine or oil. Sprinkle generously with brown sugar, cinnamon and raisins or chopped nuts. Roll up tightly and seal by pinching edges of roll together. Cut roll into 1-inch slices. Place on a greased baking sheet. Bake at 400 for 12-15 minutes until golden brown.


Jam Biscuits: Make a deep depression in each biscuit and fill with jam before baking.
