Baked Peach Pancake

More like a fruity casserole than a pancake, but this dish is really delicious for any time of day – breakfast, lunch, or even an afternoon snack, this baked pancake is always a big hit in house!


Ingredients:

2 large peaches (or 1-2 cups frozen peaches)

1 Tbsp. oil

1 Tbsp. sugar

3 eggs

1/2 cup milk

1/2 cup flour

1/4 tsp. Salt


Directions:

Preheat oven to 400°. Peel and slice peaches (alternately you can use frozen peaches that are already prepared and cut). Place the peaches in a 9x9" baking dish and set aside.

In a blender, beat together all the remaining ingredients. Pour over the peaches. Cook for about 35 - 40 minutes, until dough is cooked all the way through. Serve warm.
