Easy Homemade Apple Juice Concentrate


Ingredients:

Apples

Water


Directions:

Put as many apples as you like in a large pot with enough water so that they float and will not scorch. Simmer over medium heat about 25 minutes, or until fruit is tender and skins have split. Strain juice through cheesecloth. Pour into plastic freezer containers, remembering to leave 1/2 inch headspace. Freeze or can. When ready for juice, dilute the concentrate at the rate of 1 part concentrate to 4 to 6 parts water (to taste). Unless the fruit is extremely tart, no sweetening is needed. The opened container of concentrate will keep several days in the refrigerator if you do not want to dilute the entire amount at once.


Variation: Try using crabapples, cherries, berries or even rhubarb -- whatever is on hand or in season. Use each fruit individually or combine two or more for a new taste treat.
